Even if you take a backup, it will not be uploaded to iCloud and will not be sent to any Apple server. Just remaining inside your iPhone will never go outside. Since the data is encrypted, only your iPhone can read that data. You cannot read the "mathematical data" on any other device. Therefore, for companies like Apple, it is useless to get that data in the first place.
